there is always time for cooking: Salmon tartare


Aquí me tenéis con una nueva entrega de la serie "siempre hay tiempo para cocinar". Ya sabéis recetas rápidas con las que quedar bien con muy poco esfuerzo y muuuuuy poco tiempo. La propuesta de hoy es tan estupenda que no tendréis ni que encender los fogones. 

Vaya por delante que entiendo que ésta uno es una receta para todos. Comprendo que el problema del "crudo" pueda ser una auténtica barrera para que no hagáis este plato. Pero, antes de que digáis un NO rotundo… me pregunto si muchos de los que decís que no os gusta el crudo lo habéis probado alguna vez. En la cocina pasa muy a menudo que mucha gente afirma que algo no les gusta porque anticipan cuál será un sabor o una textura y automáticamente se cierran a probarlo. Estoy segura de que en un porcentaje bastante alto su opinión cambiaría si realmente se animaran a  probarlo.

Sea como fuere aquí no se trata de obligar a nadie y si es que no, es que no … así que para todos aquellos, que como yo, adoráis el pescado crudo y los tartars este plato os va a entusiasmar.

Here I am with another recipe for the series "There is always time for cooking". In this section you'll find  quick and tasty recipes. Today's recipe is so easy that you don't even have to turn on the stove.

I know that this recipe is not for everyone. I am aware that many people have problems with raw food. But, please, before saying NO, in capital letters, why don't you taste it? There are a lot of people who try to imaginr how a new dish will be without tasting it. They imagine the flavor or the texture but they don't really know what it tastes like. I'm pretty sure that a big percentage would change their mind after tasting this dish.

Anyway… if you are a raw-food-lover you are going to adore this dish.




INGREDIENTES:

400gr de lomos de salmón fresco (sin piel)
alcaparras (al gusto)
1 cebolleta medianita
2 aguacates (no muy grandes)
1 cucharadas de salsa Perrins
1 cucharada de salsa de soja
1 cucharada de mostaza dulce
el zumo de una lima
unas gotitas de Tabasco (opcional)
sal y pimienta


PROCEDIMIENTO:

**MUY IMPORTANTE** : Es importante que el salmón haya estado entre 24-48 horas congelado con el fin de eliminar el temido Anisakis. Partimos de la base de que tenemos los lomos descongelados.
  • Eliminar la piel del salmón y picarlo en trocitos de aproximadamente un cm y ponerlos en un bowl. Pueden ser más pequeños pero a mi personalmente me gusta encontrar la textura del pescado.
  • Picar la cebolleta y el aguacate en daditos y añadirlos al bowl.
  • Rociar con zumo de lima para evitar que el aguacate enegrezca y de paso comenzará una especie de "semi-cocción del salmón.
  • Añadir las alcaparras al gusto.
  • Salpimentar y añadir todos los condimentos ( salsa Perrins, la salsa de soja, la mostaza y unas gotitas Tabasco. El Tabasco es opcional).
  • Mezclar muy  bien todos los ingredientes con la ayuda de una cuchara  y montar el tratar en un plato con la ayuda de un aro.

INGREDIENTS

400gr fresh salmon fillets (skin removed)
capers (to taste)
1 medium fresh onion
2 avocados
1 tablespoon Perrins sauce
1 tablespoon soy sauce
1 tablespoon sweet mustard
lime juice
some drops of Tabasco (optional)
salt & pepper

DIRECTIONS:

**VERY IMPORTANT** : It is very importany to freeze the salmon at least 24-48 hours in order to kill possible anisakis. Obviously you have to defrost the fillets before using them.

  • Remove the skin and cut the salmon into one cm cubes. Place it in a bowl.
  • Dice the onion and the avocados finely and add them to the bowl.
  • Drizzle with some lime juice to prevent the oxidation of the avocado. The lime juice also starts a kind of cooking because of its acid.
  • Add capers to taste.
  • Season the mix with all of the rest of the ingredients (Perrins and soy sauce, the mustard,  the Tabasco, salt and pepper)
  • Mix well and place in a ring mold to serve.

  1. Penso que es una recepte ideal per l'estiu.....en el meu cas el problema es que no m'agrada el salmo
